A new neighborhood bar concept, Siren, is set to make waves in Boulder, Colorado, as the Beverage Licensing Authority approved its tavern liquor license during a recent meeting. Owner Jake Novotny, who also runs the popular Jungle Tiki Bar, presented the vision for Siren, which will focus on small bites and a diverse cocktail menu inspired by coastal bars worldwide.

The proposed establishment will operate from 4 PM to 11 PM on weekdays and until midnight on weekends, with a menu featuring items like oysters, mac and cheese, and various tapas. Novotny emphasized the importance of the location, previously home to a beloved community bar, and expressed excitement about becoming a steward of the space.

The approval followed a thorough needs and desires survey conducted by Liquor Licensing Professionals, which revealed overwhelming community support. Out of 412 contacted business owners and residents, 120 signatures were collected, with 98% in favor of the new tavern. This strong backing indicates a clear demand for Siren in the neighborhood, suggesting that existing outlets have not fully met local needs.

While some board members expressed concerns about the depth of the alcohol policy presented, they ultimately recognized Novotny's experience and commitment to responsible service. The approval marks a significant step for Siren, which aims to enhance the local dining scene with its unique offerings and community-focused approach. The establishment is expected to open soon, bringing a fresh vibe to Boulder’s nightlife.
